If you don't need Tees then you can of course skip this part.

Inserting Tees in a P&ID is very rare. However, instead of Tees you can use it for some other form of branch symbols.

If you use Tees they unfortunately have to be located under the Hand Valves class, because only in the Hand Valves classes you can define symbols where the AttmentPoint has the EndCode option in the symbol. This allows Plant 3D to align the symbols according to the orientation of the line segment if there is a branch. Or if you use Angle Valves.

It is not mandatory to have the different types of Tees as sub classes. It just looks better. If you have just one Tee symbol, then you still need to create the Tees class (the class name is up to you) and one sub class for the actual Tee symbol.
